Patience, rigour and respect are the hallmarks of the TARANSAUD cooperage approach, which is centred on the close-knit union between wood and wine. During ageing in French oak barrels, wines and brandies acquire the finishing touches to their character and reveal their full complexity. This is what we call a "perfect exchange". In order to achieve it, we use extremely rigorous methods at every stage of the crafting of our barrels and tanks.

RESEARCH & DÉVELOPMENT


The R & D's service of Chêne & Cie
Chêne & Cie, which regroups Taransaud, Jacques Garnier and Canton cooperages, together with Thalès, expert in hygiene for the wine industry, has created the Research & Development Department located in Gradignan, near Bordeaux, France, within Chêne Development.

Objectives
This Department works exclusively for the needs of Chêne & Cie's cooperages to meet their customers' satisfaction.
A constant relation is established between commercial and technical areas in order to have the best adequation between needs and means to achieve improvements.

Chêne & Cie conducts regular experiment programmes for its own products in order to continuously improve quality and hygiene.

Three areas are concerned :
  • oak quality control to provide customers with the "best",
  • proper knowledge of exchanges between wood and wine to meet the expectations of winemakers and oenologists,
  • winery or wine hygiene.

Organisation
  • "Quality" oriented, the R & D Department answers the Group's questions
  • Qualification: two specialist engineers work on experimentations
  • Assistance: permanent contact with Group's companies and agents

Means
  • Analysis of aromatic compounds of oak wood and wine (Gas Chromatography)
  • Measures of tannins and colour (spectrophotometry)
  • Sensorial evaluation by experts' trial
  • Counting and identification of micro-organisms (classical microbiology  plating, microscopy, Bioluminescence)
